Carob Chia Cookies

This isn't just a chocolate cookie.


It's more unique than that.

There are tons of chocolate cookie recipes floating around the web.  Some have even been shared on this blog already (my Chocolate Cake Cookies for example).


What there aren't tons of, however, are Carob and Chia Seed Cookie recipes.  I'd bet most of you have never even seem one before.

So, you see, these are most definitely not just chocolate cookies.  These are so much more special than that.


You know what else these cookies are?  Extremely delicious and healthy!

The total best of both worlds.

Except, maybe, there's a bit more of the delicious world, because you cannot tell that these are healthy.


Carob Chia Cookies - original recipe can be found here

  • 1/4 - 1/3 cup sugar
  • 2 tbsp water
  • 1 tbsp vanilla extract
  • 2 tbsp applesauce
  • 3 tbsp chia seeds, whole
  • 3 tbsp carob powder
  • 3/4 cup flour of choice
  • 1/2 tsp baking soda
  • 1 tsp cardamom
  • 1/2 tsp cinnamon
  • pinch salt

Preheat oven to 350 degrees.  Mix together dry ingredients in a large bowl.  Add remaining ingredients and mix well, until everything is combined.  Scoop onto a sprayed cookie sheet and place in freezer for around 15 minutes.  Put cookies straight from freezer to oven, and bake for roughly 15 minutes.

If you've never had carob before, these cookies are a great way to give it a try.  They've got a sweet and almost fruity taste that really does make them one of a kind.

Although, if you don't have carob powder, or don't like the taste if it, cocoa would be a fine substitute and would still (most likely) yield some very yummy cookies.

Fun Sized Chocolate Chip Cookies

These cookies are very special.

Why, you ask?



Reason 1: They. Are. Adorable. I mean, don't you just want to shovel them into your mouth? When cookies are this tiny, you can't help but want to pinch their little cheeks... with your teeth.




Reason 2: Believe it or not, these babies are actually healthy. You could even eat the whole batch with no guilt. Now, that's not something you can say about any dessert!



Reason 3: I'd say this is the perfect recipe for your gluten free friends to enjoy. Because, you guessed it, these cookies are completely gluten and grain free. It's all thanks to my newly purchased friend, coconut flour.


Reason 4: I don't know about you, but where I live, it's hot. And that means I don't even want to go near my oven. Luckily, to make these cookies, I don't have to! They only require about 3 minutes in the microwave.




Man, it looks like you'd be pretty stupid not to at least give these a try, now.

Fun Sized Chocolate Chip Cookies - recipe inspired by this one
  • 2 tbsp coconut flour
  • 2 tbsp mashed banana (you could try applesauce or baby food too)
  • pinch salt
  • 1/8 tsp molasses
  • 1/4 tsp vanilla extract
  • 1 tbsp sugar
  • 3 tbsp milk (I used unsweetened vanilla almond milk)
  • 1/2 tbsp mini chocolate chips
Mix together coconut flour, sugar, and salt in a small bowl.  Add in mashed banana, molasses, and vanilla extract.  Then, add milk in small amounts until fully incorporated.  Mix in chocolate chips.  Drop dough, by the teaspoon, onto a sprayed microwave safe dish and press into cookie shape.  Microwave for 1 minute, and then in 30 second rounds until cookies smell and look done (because of the coconut flour, they may still seem a but crumbly).  Let cool before eating.

Addictive Chocolate Cake Cookies

Boy, do these cookies live up to their name.

They really are addictive.


With all the rich flavor of a slice of chocolate cake packed into one cookie, you really can't just eat one.  It's humanly impossible.


A warning to all:  If you make these, make small cookies.  You'll be eating at least 5 of them in one sitting.  Plus, smaller cookies means more cookies, and more cookies is never a bad thing.  Especially when the cookies are so addictive that you just might eat 20 in one day.


Alright, maybe I'm going a bit too overboard with the whole addictive concept.

But I can't help it!  These things are just so good!

But, honestly, isn't that what you'd expect when you see chocolate, cake, and cookie, all in the same sentence?


Chocolate Cake Cookies - you can find the original recipe here
(makes a pretty big batch, but believe me, they'll be gone before you know it)

1 1/2 cups flour
1/2 cup sugar (some people may want more)
1/2 cup  unsweetened cocoa powder - keep in mind that better quality cocoa powder makes better cookies
1/2 teaspoon baking soda
A pinch of salt
1/2 cup Karo syrup (light or dark)
3 egg whites

Preheat oven to 350 degrees.  In a large bowl combine flour, sugar, cocoa, baking soda, and salt.  Stir in the Karo syrup and egg whites until well blended.  The dough will be sticky and relatively thick.  Spoon dough onto sprayed cookie sheets.  I recommend using teaspoons to measure out the size of each cookie.  Bake for 7 to 9 minutes or just until the cookies have set.  The cookies should still be soft when pressed when you take them out.  Let cookies cool before eating.


Now, you can try these cookies and see if you agree with me in terms of addictive-ness.  I really think you will.  That is, unless you don't like chocolate cake.  Or cookies.

But c'mon, that's like 5% of the whole world.

Oatmeal Chocolate Chip Breakfast Cooke

This is a cookie.


A big cookie.

A chocolaty cookie.

A delicious cookie.

A cookie you want to eat.

And you can eat it . . . for breakfast!


Oatmeal Chocolate Chip Breakfast Cookie
(makes one deliciously large cookie)


  • 5 tsp flour
  • A little bit of baking soda
  • A pinch of salt
  • 2 tsp applesauce
  • 1/4 tsp vanilla extract
  • 2 tbsp rolled oats
  • A couple chocolate chips (or more if you like)
  • Some milk or water, if needed
  • Additional add-ins (dried fruit, nuts, peanut butter chips)
Combine dry ingredients, then add wet.  Add just enough milk or water so that the dough holds together.  Form into cookie shape on a sprayed microwave safe dish and microwave for around 1 minute, or until your cookie reaches it's desired texture.  Eat it while it's still warm!


See?  

You can have this cookie all to yourself in only 2 minutes. . .and you're allowed to eat it for breakfast.

What more could someone ask for?

Chocolate Chip Cookies

Have you ever heard the saying "don't judge a cookie by it's face"?

No?


Well please pretend you have for the sake of these cookies . . . because they are uuuuuugly.

I know people say you eat with your eyes, but I'm going to ask you very nicely to please just eat with your mouths when it comes to these cookies.

Ok? You got that? Great.  Now I don't have to worry that you'll X out this page when I show you another picture.





I only have one thing to say now:

Try these cookies!!!!





Chocolate Chip Cookies

(makes a small batch)



  • 1/3 cup plus 1/4 cup flour
  • a pinch salt
  • 1/4 tsp baking soda
  • up to 1/3 cup chocolate chips, depending on your preference
  • 2 tbsp brown sugar
  • 2 tbsp white sugar
  • 1/2 tsp vanilla extract
  • 1 tablespoon vegetable oil
  • 1-3 tablespoons milk of choice, as needed
Preheat the oven to 375 degrees. Mix your dry ingredients, then add in wet. Form cookies and bake 6-7 minutes. Take out when still underdone–they’ll continue to cook while cooling, and so you don’t want them to get hard.  I might've eaten one before letting it cool (he,he)


These chocolate chip cookies can be eaten with a tall glass of milk, given as a present to a friend, or devoured all in one sitting.  I'm sure you could bring them to a party too, but in that case I highly reccommend doubling, tripling, or maybe even quadrupling, the recipe because as it is you only get about 6 cookies.

Oh, and by the way, I'm challenging anyone to use the same recipe and make prettier cookies.

Rainy Day Double Peanut Butter Cookies


Rain rain go away, come again another day

Just kidding.


Rain, don't you go anywhere.



Do you like the rain?

I do!

I love the misty smell, and the refreshing feeling after raindrops have coated my face.  Most of all, I love the excuse rain gives me to be lazy, read, and bake things.

And there is nothing like eating a peanut butter cookie a double peanut butter cookie while reading a book on a rainy day.

Seriously, nothing.


Double Peanut Butter Cookies - Recipe inspiration comes from here
(makes 2-3 cookies, perfect for when you want to eat the whole darn batch)
  • 2 tbsp flour
  • 1 1/2 tbsp peanut butter
  • a pinch salt
  • a little but of baking soda (1/16 tsp, if you want a precise number)
  • 1/4 tsp vanilla extract
  • 1 1/2 tbsp maple syrup
  • 1 tsp applesauce
  • peanut butter chocolate chips (you can leave these out, but then your cookies won't be double peanut butter)
Mix dry ingredients.  Add peanut butter and wet ingredients.  Mix well and form into cookies (or maybe one big one).  Bake at 350 degrees for 8 to 10 minutes.




Remember, you don't have to share these cookies! 


You get to eat every lest crumb all to yourself.  


And just to tell you, these cookies taste way better if you eat them while they're still warm (but then again what cookie doesn't)


So, go ahead: mix your ingredients, preheat your oven, and when the cookies are ready, take a big ol' bite right away!
