You read that right. Caramel stuffed.
Remember that Date Caramel from way back when? Well today it's making another appearance. This time, stuffed into the middle of a chocolate chip cookie.

So here's the scoop. These cookies arent quite your classic ones. Despite the fact that they're stuffed with a date "caramel", they're also a bit in the cakey side of things. But, don't let it scare you. I normally don't like cakey cookies, but thought these were delicious. I suppose it's something about the sweet middle and humongous size that really draws you in.
Bigger is always better.
Oh, yeah, and these are also six year old approved. How many healthy cookies do you know that can pull that off? I gave one to my younger sisters friend, and she gobbled it up, even coming back for another. Score!
My opinion on the matter: If a picky little kid likes them, you're practically guatenteed to! Make them!
Caramel Stuffed Chocolate Chip Cookies
- 3/4 cup spelt flour
- 1/2 cup whole wheat flour
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/4 tsp cinnamon
- 2 tbsp honey
- 2 tbsp turbinado sugar
- 1/2 tsp vanilla
- 2 egg whites
- 1 tbsp oil
- 3 tbsp water or milk
- 1/3 cup chocolate chips
- around 2 tbsp Date Caramel
In a large bowl, mix together first 5 ingredients. In another bowl, whisk together honey, sugar, vanilla, egg whites, oil, and liquid of choice. Add wet ingredients to try and mix well until a cookie dough forms. Fold in chocolate chips. Scoop dough into a plastic bag and chill overnight, or for at least 3 hours. The next day, preheat oven to 350F and line a baking sheet with a no stick mat or parchment paper. Remove dough from bag.
Take about 1 tsp of dough and flatten it into a circle shape.
Drop about 1/4 tsp of caramel in the middle of the cookie dough circle
Place another flattened piece of cookie dough on top.
Smooth it out around the edges, so that it looks like the picture below.
Repeat until all dough has been used, and place each circle on the lined baking sheet.
Bake in preheated oven for 7 minutes. Let cookies cool a couple minutes on baking sheet before tranferring to a cooling rack. Recipe makes 10 big cookies.

Oh yum, these sound delicious! I'm pretty much obsessed with caramel and I've been wondering if there was a way to create a healthier version. I'm really excited to try your date caramel now!
